O Holy Night (Cantique de Noel) by Adolphe Adam has become a Christmas Eve standard. Initially it was resisted by French clergy because the political views of the lyricist, Placide Cappeau, were too liberal.
Cappeau wanted to end inequality and slavery. What a bleeding heart. It was also asserted that Adam may have been Jewish and that was unacceptable in 19th Century France.
Here are two versions. One by Caruso and the other by Jussi Bjorling.

In the Bleak Midwinter is a poem written by Christina Rossetti at the request of a London magazine. This song has been sung by everyone from Julie Andrews to James Taylor to Jewel.

Gustav Holst also set the medieval text and tune, "Let All Mortal Flesh Keep Silence." The piece starts with the plain chant and gradually crescendos throughout the composition ending with string arpeggios, brass, and timpani.
