Some concepts are so foolishly simple they make me facepalm in disbelief at my own lack of inspiration. The Baked Bear in Pacific Beach is like that. The idea is ridiculously concise: custom-built ice cream sandwiches made with fresh cookies, brownies and waffles. That is the entire menu and people are lining up for them. I should have thought of this!

The name of the game is “options.” You could get a red velvet cookie and a snickerdoodle filled with mint chocolate chip ice cream. Two oatmeal raisins sandwiching butter pecan. Cookie dough ice cream smashed between a waffle and a brownie.

And it’s not even expensive. Cookie sandwiches are $2.95. $3.95 with waffles or brownies. Individual cookies are $0.75, $8/dozen.
The ice cream isn’t the finest, most luxuriant stuff available, more Breyer’s than Ben and Jerry’s, but that almost doesn’t matter when it’s exploding out from between a few cookies that are mere minutes out of the convection oven. And, seriously, for three bucks who cares!? I will probably not go to PB again without stopping at Baked Bear. This is a great idea.
