Qvandeyz's Finest Catering's beignet man Nestor was kind enough to take me through the process, but Executive Chef Quanettra Purdy had to step in and lay a heavy proprietary hand on the proceedings. She was very sweet about it though, and notes that if people check her website in a couple of weeks, they'll be able to get a small-batch version of her recipe.
