San Diego’s culinary hot shots are hitting the sidewalks this fall for Siesel’s Old-Fashioned Meats Sidewalk Chef Series of free outdoor tastings and culinary demonstrations. The chefs will share exclusive tips and prep demonstrations and insider tricks of the trade — giving customers the opportunity to mingle with them outside of their restaurant kitchens in a neighborhood setting.

San Diego celebrity chef Deborah Scott will dish Tips for Tailgating for grilling gurus and BBQ enthusiasts alike. From rubs and spices to sauces and marinades, Scott will offer up tips to get you geared up for game day.
The demo will feature Siesel’s flatiron steak with a morita rub, Berkshire St. Louis ribs with Iowa Meat Farms’ own dry rub, and a sweet & smoky BBQ sauce. Chef Scott will demonstrate side dish selections such as candied almond slaw and potato onion skewers with rosemary butter.
Gabriel Chatten, Boneworks Culinarte, Western Regional Chef

With experience as the executive sous chef of the South Seas Resort on Captiva Island and as the former executive chef of historic U.S. Grant Hotel, Gabriel Chatten will showcase Comfort Classics, just as the weather cools down in San Diego.
With signature sauces made with ingredients from the Boneworks Culinarte collection, Chef Chatten will discuss how to braise lamb shanks and techniques for a traditional ossobuco dish. He’ll utilize his restaurant knowledge to offer guests tips that they can perfect “as the professionals do,” in the comfort of their own kitchens.

Chef Bernard Guillas will present a Global Grilling Demo featuring recipes from his coauthored, award-winning cookbook, Flying Pans -- Two Chefs, One World.
Using prime cuts from Siesel’s and recipes from Flying Pans, Guillas will highlight recipes and dishes inspired from his travels, including a Kurobuta Barbecue Pork recipe from Japan and a Walnut Suneli Spiced Chicken recipe from Republic of Georgia. Guillas will also sell and sign his cookbook.
