Kippered herring has been a snack food for many decades, and is a staple in English Cooking. Basically, "kippers" are smoked herring, and yes, they are very delicious! I have also found that they can make a nice change-of-pace from tuna in fish-salad sandwiches. I make mine with catsup, mustard, spices, and a few drops of soya. I do not use mayo, since I'm allergic to it. The bread I use is hot dog buns. Easy to fill-and-wrap.
Ingredients
- 8-10 cans kippered herring
- 5 hot dog buns
- ½ cup yellow mustard
- ½ cup catsup
- 2 ozs soya sauce
- 1 pinch seasoned salt
- 1 pinch garlic powder
- 5 slices cheddar cheese Optional
Instructions
Let's get this party started!
a) open the cans of kippers, put into bowl.
b) add spices, catsup, soya, and mustard.
c) mash and blend together until smooth.
d) open a hot dog bun, place cheese in center.
e) fill and smooth filling into bun, close.
f) repeat e) until all sandwiches made.
g) wrap remainder and chill.
h) happy snacking!
