This recipe came into existence one morning when I was hungry, in a hurry, and not quite fully awake. This lucky accident happened by the mere fact that the ingredients were in my fridge, within my sight line, and within my immediate grasp. This recipe is now one of my favorite breakfast dishes, but it occurred to me that you could also cut the rolls into pinwheels, stick a toothpick through them, place them on a platter and serve them as fancy appetizers. Voilà!
Ingredients
- 4 flour tortillas
- ½ cup orange marmalade
- 1 cup feta cheese, crumbled
- 4 tsps chopped hazelnuts
Instructions
Chop the hazelnuts in a nut chopper, or coarsely chop with a pairing knife. Place the chopped nuts in small bowl and set aside. Take 4 flour tortillas out of the package, place them on a paper plate, then microwave for 20 seconds, or heat them individually in a non-greased skillet until just warm. Put the tortillas onto individual plates. Spread one fourth of the marmalade onto each of the tortillas. Put ½ a cup of the crumbled feta cheese onto each tortilla. Sprinkle 1 teaspoon of the chopped hazelnuts onto each of the tortillas. Roll up the tortillas and serve immediately. For appetizers, slice the rolled tortillas into pinwheels, push a toothpick through each slice (to hold the pinwheel together), place pinwheels on a platter and serve.
