One of San Diego County's more adventurous brewing companies features myriad "fast sour" beers, the majority of which are fermented using Brettanomyces, a wild yeast strain abhorred by vintners, but popular among brewers for its ability to lend spice, funk, and dryness to a beer as it ages. The experimental nature of these beers marries well with a DIY-themed tasting room settled in a Vista business park.
