Nishiki Ramen

The first local iteration of a Japanese chain, this Kearny Mesa noodle joint promises fresh-made noodles, cute kids meals, and bright, cheery decor. On the whole, the ramen is middling fair, without anything really distinguishing it from the competition. The broth is neither overly clear, nor richly laced with fat and meaty flavor. The noodles neither oversoft, nor extra chewy. Credit is deserved, however, for the soft-boiled eggs; each of which displays a perfectly executed, gooey interior. Objectively speaking, diners will do better by walking
across the parking lot and ordering noodles at Santouka, inside Mitsuwa. In reality, crowds being what they are, Nishiki is a not-bad/not-great second option
