Ranjit Singh is the chef-owner of Masala Cottage, an Indian place on El Cajon Boulevard. He's known for his many varieties of samosas, triangular wraps fried or baked pastry stuffed with basically anything. You’ll find them from Cairo to Lima to Baghdad to Bangkok.
