Part of a larger catering operation, Mark’s Bark opens every Sunday from noon to six in Normal Heights. Without playing to any particular regional style, Mark’s brisket makes a serious bid to be the best in town. The potato salad — studded with bacon, eggs, and cheese — is not to be missed, nor is the coleslaw, freshly dressed for every order. Ribs are the next best bet, with the pork shoulder slouching into third place due to a lack of fatty juiciness.
