That means exploring beyond beer, with hard seltzers, ciders, non-alcoholic drinks, and wines. And we're especially passionate about supporting sustainable winemakers like Tablas Creek."
At the end of the month, Pure Project will release a rosé, one that will be available both on tap and in bottles. This latest concoction joins the brewery’s Cabernet Sauvignon and Sauvignon Blanc on its wine list. The rosé is the result of a collaboration between Pure Project and the aforementioned Tablas Creek, a Paso Robles winery that has been named the world’s first Regenerative Organic Certified winery — a natural fit for the brewery which is committed to using as many pure, local ingredients as possible.
Fans of Pure Project’s beer need not worry that the brewery's expanding range of products will mean a reduction in new brews. In April alone, Pure Project is releasing four new beers, including two IPAs, a Belgian, and a stout.
Limitless Light, a collaboration with Anaheim’s Radiant Beer Co., is a murky double IPA featuring Nelson Sauvin, Strata, and Citra Cryo hops that provide flavors of pineapple upside-down cake, coconut cream, and guava. Another collab with Radiant Beer, Fading Rays is a remarkably complex bourbon barrel-aged stout. It was aged in a blend of Heaven Hill barrels for 21 months, Cutwater bourbon barrels for 15 months, and Kentucky Owl barrels for 16 months before being infused with brown sugar, cacao, and vanilla. The viscous, velvety mouthfeel unveils flavors of fudge, chocolate cake, and brown sugar.
To celebrate International Women’s Day, the women at Pure Project teamed up with The Bountiful Bag, Sustainability is Sexy, and SD Brewcycling Collaborative to create Sola Terra. The Belgian-style single features a bouquet of jasmine, clove, and chamomile, while the palate is treated to tastes of honeysuckle, brioche bread, and pear.
A local collaboration with North Park Beer Co. led to the creation of Hidden Gold, a murky IPA featuring Citra Incognito and Superdelic hops that rounds out April’s releases. Brewers at Pure Project had taken to referring to Citra Incognito as “hidden gold” due to its bold flavor. Citra Incognito is a hop extract that provides an extra punch of flavor and aroma by preventing the wort absorption that occurs with hop pellets. As a result, Hidden Gold boasts a strong citrus and tropical fruit flavor.
Pure Project has also expanded its offerings on the food front. Its hit Empanada Kitchen at the Balboa Park taproom has expanded to the Miramar Taproom, which will offer the same menu. Meanwhile, the North Park taproom has partnered with URBN Pizza: five days a week, URBN will serve pizzas, wings, and more alongside Pure Project’s libations.
