The Dough Master’s Dinner
In celebration of the arrival of new Executive Chef Daniele Piazza, Ambrogio15 in North Pacific Beach invites guests to The Dough Master’s Dinner, a chef-crafted gourmet pizza and wine-paired dinner on Thursday, June 7 from 6 to 9 p.m. Guests will explore six courses of novel gourmet pizzas made by Chef Daniele including whole wheat flour pizza topped with potatoes, porcini mushrooms, sausage and rosemary as well as a “white” pizza with soppressata salame, fresh imported burrata cheese and black olive taggiasche – plus, four more surprise specialties from Chef Daniele in collaboration with Ambrogio15. Each pizza will be paired with six organic and biodynamic wines from the century-old Fasoli Gino Winery in Veneto, near to where Chef Daniele was born and raised. This outstanding small winery was founded in 1925 and produces a wide range of wines. The Dough Master’s Dinner will feature: TASI Garganega IGT Spumante Brut Stylish balance, fresh and persistent, with a fine perlage and a straw yellow color. Elegant aromas of wild flowers, followed by dry notes balanced with the initial sweetness. Grape varieties: Garganega Borgoletto Soave DOC Bright light yellow in color, the bouquet is both floral and fruity and the wine leaves almost saline with fruity notes on the finish. The aromas are floral and the taste is harmonious and full-bodied. The finish is medium to long with a light aftertaste of bitter almonds. Grape varieties: Garganega Bardolino DOC la Corte del Pozzo Bardolino should be drunk young. The bouquet is slightly fruity and floral with notes of wild rose with an enveloping scent of fresh flowers. Grape varieties: Corvina, Corvinone, Rondinella TASI Valpolicella DOC Superiore Red ruby color with aromas of black cherry and raspberry. Frank and quaffable, with notes of red fruit, a gentle tannin and good persistence. Grape varieties: Corvina, Corvinone, Rondinella TASI Ripasso Doc Superiore Ripe cherry and dried plums aromas. Soft and velvety, with a light tannin, hints of spices and a textural and intense finish. Grape varieties: Corvina, Corvinone, Rondinella Valpo - Valpolicella DOC Ripasso Superiore The bouquet is full of spicy notes such as cinnamon, cloves and black pepper. On the palate, the roundness and elegance come through. Grape varieties: Corvinone, Corvina and Rondinella The Dough Master’s Dinner will transport guests to the unexplored edge where traditional pizzerias meet upscale and innovative modern dining – and take guests on a Journey through Chef Daniele’s beautiful region of Veneto, where many of Italy’s best wines, foods and recipes originated. Chef Daniele is strongly influenced by names like Renato Bosco and Simone Padoan, a candidate for the first Michelin Star ever given to a pizza restaurant. His recent role as Head Pizza Chef at the historic Trattoria Ballotta, founded in 1605 more than 400 years ago, aligns with Ambrogio15’s commitment to a long fermentation process and stone ground Petra flour during the creation of gourmet-style pizza, and sourcing from those using sustainable and organic farming techniques.
