This is our Caribbean class -- think Island cooking, with black beans, plantains, jerk chicken, rum drinks.
Menu: Callaloo, a traditional West Indian stew with salt pork, crab, coconut, greens, and scotch bonnets; shrimp, mango, and papaya salad with vanilla citrus dressing; wet-jerk marinade and fish; best black bean salad; flambéed bananas with rum raisin ice cream.
