A look at the breads of eastern European Jewish culture and the changes in both as a result of the immigrants’ integration into American culture. Stanley Ginsberg is co-author (with Norman Berg) of Inside the Jewish Bakery: Recipes and Memories from the Golden Age of Jewish Baking. He grew up in post-World War Two Brooklyn, where he learned to bake from his grandmothers. Now retired, he spends his time baking, writing about baking and running The New York Bakers, an Internet seller of professional and specialty ingredients to home bakers.
