With Director of Culinary Education Katherine Emmenegger. In this hands-on class, students will learn everything it takes to make tamales, from the preparation of the masa and fillings to the techniques of rolling and steaming them. Recipes will include Oaxaca Mole Pork, Chicken and Tomatillo, Sweet Potato, Black Bean, and Roasted Poblano Chile.
